Fabulously simple breakfast on a lazy holiday morning

Today is December 14th and we’re officially 11 days away from Christmas....so basically between work, family, holiday shopping, decorating and all of the holiday AMAZING parties, I’m a little wiped out! This time of year can be exceptionally draining on our bodies, so this gloomy Saturday morning I‘ve decided to be a little lazy and just chill. It’s time for a little R&R! Many say that breakfast is the most important meal of the day, however I think they’re all important LOL being the foodie that I am. Sometimes we just aren’t in the mood to make an elaborate meal, but since every meal has to be fabulously worth eating...we’ve decided to make it simple today. I love me some avocado toast, so this morning I’ve toasted up some of Schar’s gluten free multi grain bread, smashed a bit of avocado on it, shredded some purple cabbage for crunch and a touch of Himalayan pink salt to finish it off. As you can see I didn’t even bother to dirty a dish and went straight for the paper towel lol. As for my tea this morning, I went in the

backyard and twisted off a Meyer lemon from my tree, squeezed the juice of half of it into my cup, added a little honey and some freshly sliced ginger root along with hot, hot water. Let it steep for about three minutes and give it a stir! Breakfast doesn’t have to be laborious or boring, a light and bright, nutritious breakfast is the perfect start to your day any day of the week. Happy holidays my friends :)
